Pop Rocks are small pieces of hard candy that have been expanded with carbon dioxide under superatmospheric pressure. When the carbonated sugar granules come into contact with moisture—in your mouth or in water, milk, soda, etc.— the candy dissolves and the trapped carbon dioxide bubbles are released, creating that characteristic crackling and popping sound!
